International chili cook off opens in Marshall


The event is one of 500 international qualifying events readying for the mother of all chili cook-offs, the Terlingua International Chili championship.

— If it’s better to give than receive, then Main Street’s Second Saturday in Marshall, Texas has to be the absolute best, with something for everyone this Mother’s Day weekend –art and music, food and shopping -- and prize-winning chili.

The East Texas Chili Pod’s Ninth Annual Chili Appreciation Society International Chili Cook off begins with registration at 8 a.m., May 12, on the historic Harrison County Courthouse Square in downtown Marshall.

The event is one of 500 international qualifying events held by the CASI in readying for the mother of all chili cook-offs, the Terlingua International Chili championship, held the first Saturday of November.

It’s not taste alone that makes a prize-winning bowl of red – it’s got to meet five criteria: aroma, color, consistency, taste and aftertaste. Cook up some of the recipes from former prizewinners, posted on http://www.chili.org, and judge for yourself.
